AVOCADO DIP

Ingredients

  • 12 Ripe avocados
  • 30g Red chili
  • 1/2 Bunch coriander
  • 200g Red onion
  • 2 Lemons
  • Salt
  • Pepper

Instructions

  • Remove the stone from the avocado and spoon the flesh into a bowl
  • Add to the bowl the juice of the two lemons and mix through
  • Peel the onion and finely chop
  • Deseed the chili and finely chop
  • Wash the coriander leaving the stems in 
  • Roughly chop the coriander 
  • Add all of the chopped ingredients to the avocado and mix well
  • Season to taste with the salt and pepper
  • Add more lemon juice if needed
