AVOCADO DIP

Ingredients
- 12 Ripe avocados
- 30g Red chili
- 1/2 Bunch coriander
- 200g Red onion
- 2 Lemons
- Salt
- Pepper
Instructions
- Remove the stone from the avocado and spoon the flesh into a bowl
- Add to the bowl the juice of the two lemons and mix through
- Peel the onion and finely chop
- Deseed the chili and finely chop
- Wash the coriander leaving the stems in
- Roughly chop the coriander
- Add all of the chopped ingredients to the avocado and mix well
- Season to taste with the salt and pepper
- Add more lemon juice if needed
