APPLE SLAW

 Ingredients

  • Apples
  • Celeriac
  • White onion
  • Mayonnaise
  • White wine vinegar
  • Dijon mustard
  • Olive oil
  • Salt
  • Black pepper

Instructions

  • Peel the celeriac and remove any root or stem
  • Peel the onion and the apples
  • Slice the onion as finely as you can and place in a bowl
  • Take the apple and the celeriac and cut into slices (as thinly as possible making sure to remove the core)
  • Once sliced cut again into strips as thin as possible (julienne)
  • Place the apple and celeriac into the bowl with the onion
  • Add to the vegetables the mayonnaise, mustard, vinegar and olive oil
  • Mix well and add salt and pepper to taste
  • Cover with plastic film and reserve till needed
