APPLE SLAW
Prep/Cooking Time: 15-30 Minutes

- Apples
- Celeriac
- White onion
- Mayonnaise
- White wine vinegar
- Dijon mustard
- Olive oil
- Salt
- Black pepper
Instructions
- Peel the celeriac and remove any root or stem
- Peel the onion and the apples
- Slice the onion as finely as you can and place in a bowl
- Take the apple and the celeriac and cut into slices (as thinly as possible making sure to remove the core)
- Once sliced cut again into strips as thin as possible (julienne)
- Place the apple and celeriac into the bowl with the onion
- Add to the vegetables the mayonnaise, mustard, vinegar and olive oil
- Mix well and add salt and pepper to taste
- Cover with plastic film and reserve till needed
