WHITE TIN LOAF (3 * 2 KILO TINS)

Ingredients
- 3000g strong flour
- 1000g semolina
- 80g yeast
- 30g salt
- 2800 water
Instructions
- Place the dry ingredients into a large machine mixing bowl
- Add to the bowl the water
- Set to mix on the lowest speed to combine all the ingredients
- Once all the ingredients are combined turn the mixer to the medium setting
- Mix for 6 minutes
- After 6 minutes turn up to the highest speed and mix for 1 minute
- Once the dough is made turn out onto a floured surface
- Weigh out into 2.1 kilo pieces
- Form the dough into the required shape and place in the oiled and floured bread Tins
- Leave to prove in the Tin with the lid on
- Once risen transfer to the oven
- Cook at 220c for 40 minutes with an initial 15 second steam
- As soon as the Tins are removed from the oven turn out the loaves
- Transfer to the rack to cool
