WHITE TIN LOAF (3 * 2 KILO TINS)

Prep/Cooking Time: Longer Than 120 Minutes

Ingredients

  • 3000g strong flour
  • 1000g semolina
  • 80g yeast
  • 30g salt
  • 2800 water

Instructions

  • Place the dry ingredients into a large machine mixing bowl
  • Add to the bowl the water
  • Set to mix on the lowest speed to combine all the ingredients
  • Once all the ingredients are combined turn the mixer to the medium setting
  • Mix for 6 minutes
  • After 6 minutes turn up to the highest speed and mix for 1 minute
  • Once the dough is made turn out onto a floured surface
  • Weigh out into 2.1 kilo pieces
  • Form the dough into the required shape and place in the oiled and floured bread Tins
  • Leave to prove in the Tin with the lid on
  • Once risen transfer to the oven
  • Cook at 220c for 40 minutes with an initial 15 second steam
  • As soon as the Tins are removed from the oven turn out the loaves  
  • Transfer to the rack to cool
