WHITE ONION SOUP WITH STILTON AND CROUTONS

Ingredients

  • 20g Garlic
  • 1100g White onions
  • 325g Potato
  • 2g Thyme leaves
  • 1.5ltr Water
  • 70g Butter
  • 120g Cream
  • 40g Stilton cheese
  • 200g Croutons
  • Salt
  • Pepper

Instructions

  • Peel the onions and garlic
  • Roughly chop the onions and garlic
  • Add the butter to a thick bottom pan and heat over medium
  • Add to the pan the chopped onion and garlic
  • Cook till beginning to soften
  • Peel the potatoes and slice thinly
  • Add the potatoes to the pot along with the water and thyme
  • Bring to the boil
  • Turn down to a simmer and cook for 45 minutes
  • Remove from the heat and add the stilton and cream
  • Blend
  • Season to taste with the salt and pepper
  • Serve hot in a soup dish
  • Top with croutons
