WHITE ONION SOUP WITH STILTON AND CROUTONS

Ingredients
- 20g Garlic
- 1100g White onions
- 325g Potato
- 2g Thyme leaves
- 1.5ltr Water
- 70g Butter
- 120g Cream
- 40g Stilton cheese
- 200g Croutons
- Salt
- Pepper
Instructions
- Peel the onions and garlic
- Roughly chop the onions and garlic
- Add the butter to a thick bottom pan and heat over medium
- Add to the pan the chopped onion and garlic
- Cook till beginning to soften
- Peel the potatoes and slice thinly
- Add the potatoes to the pot along with the water and thyme
- Bring to the boil
- Turn down to a simmer and cook for 45 minutes
- Remove from the heat and add the stilton and cream
- Blend
- Season to taste with the salt and pepper
- Serve hot in a soup dish
- Top with croutons
