WHITE BEAN PUREE
Prep/Cooking Time: 60-90 Minutes

- 500g White beans cooked weight (canned or dried)
- 25g Olive oil
- 200g Onion
- 100g Celery
- 15g Garlic
- 1pc Bay leaves
- 1 sm sprig Thyme
- 1 sm sprig Rosemary
- 3g Salt
- .5g Pepper
Instructions
- If using canned beans place in a strainer to remove all liquid
- If using dried beans place in water to soak overnight
- In the morning drain off the water from the beans and place the beans in a saucepan
- Cover the beans with fresh water and place over a high heat
- Bring to the boil then turn down the heat so the beans simmer
- Cook the beans for 45 minutes or until soft to the bite
- Once cooked drain off the water and either leave to cool or make the puree immediately
- Wash the celery and peel the onions and garlic
- Roughly chop the onions, garlic and celery and place in a thick bottom pan
- Add to the pan the olive oil and turn on the heat to medium
- Cook without color till the onions and celery are softened
- Add the bay leaf, rosemary and thyme
- Now add the cooked beans and stir through
- Cook the mix until there is little to no moisture left in the pan
- Now remove from the heat
- Pick out the herbs and bay leaves
- Now blend to create a smooth puree
- Once a smooth puree is achieved season with salt and pepper
- Reserve in the fridge till needed
