WHITE BEAN AND SWEET POTATO SALAD

Ingredients

  • 120g cooked white beans
  • 10g red onion
  • 80g sweet potatoes
  • 20ml olive oil
  • 30g rocket
  • Salt
  • Pepper
  • 5g Dijon mustard
  • 5ml white vinegar
  • 10ml olive oil
  • 3g honey

Instructions

  • Peel the sweet potato and place on a baking sheet
  • Drizzle with olive oil and seasoning
  • Cook in pr heated oven at 180c
  • Cook for 20 minutes or until tender
  • Remove from the oven and leave to cool
  • To make the dressing place all 4 ingredients in a small bowl (honey, mustard, vinegar & oil)
  • Whisk together till emulsified
  • Reserve in the fridge till needed
  • Place the cooked and drained beans in a mixing bowl
  • Add to the bowl the cooked sweet potato, onion and rocket
  • Toss through and add the dressing
  • Toss again and check the seasoning
  • Serve immediately
