WHITE BEAN AND SWEET POTATO SALAD

Ingredients
- 120g cooked white beans
- 10g red onion
- 80g sweet potatoes
- 20ml olive oil
- 30g rocket
- Salt
- Pepper
- 5g Dijon mustard
- 5ml white vinegar
- 10ml olive oil
- 3g honey
Instructions
- Peel the sweet potato and place on a baking sheet
- Drizzle with olive oil and seasoning
- Cook in pr heated oven at 180c
- Cook for 20 minutes or until tender
- Remove from the oven and leave to cool
- To make the dressing place all 4 ingredients in a small bowl (honey, mustard, vinegar & oil)
- Whisk together till emulsified
- Reserve in the fridge till needed
- Place the cooked and drained beans in a mixing bowl
- Add to the bowl the cooked sweet potato, onion and rocket
- Toss through and add the dressing
- Toss again and check the seasoning
- Serve immediately
