WEDGE SALAD

Ingredients
  • Iceburg lettuce
  • Cherry tomatoes
  • Avocado
  • Bacon
  • Blue cheese crumbles

  • Mayonnaise
  • Greek yoghurt
  • White vinegar
  • Blue cheese
  • Salt
  • Pepper
Instructions

  • Wash the lettuce and remove the outer leaves
  • Spin dry and cut into 8 even wedges
  • Reserve the wedges in the fridge under a damp paper towel
  • Place the yoghurt, Mayonnaise, vinegar & blue cheese in a blender
  • Pulse till a chunky consistency is acheived. Season to taste with salt and pepper
  • Reserve in the fridge till needed
  • Wash the cherry tomatoes and cut into halves. Reserve
  • Peel the avocado and remove the pitt. Reserve
  • Roughly chop the bacon and reserve
To serve
  • Place two wedges of iceburg in the dish so they are overlapping
  • Add to the dish the cherry tomatoes, bacon, roughly chopped avocado and the blue cheese crumbles.
  • Generously drizzle the blue cheese dressing over the top and serve immediately
