VANILLA CUPCAKE

Ingredients
- 180g All purpose flour
- 1 tsp Baking powder
- 1/2 tsp Salt
- 110g Butter
- 200g Sugar
- 2 Eggs
- 1 tsp Vanilla essence
- 230g Butter
- 540g Powdered sugar
- 2 tsp Vanilla essence
- 1/2 tsp Salt
Instructions
- Place the room temperature butter and sugar in a machine mixing bowl
- Turn on the machine to beet the butter
- Beat for 2 minutes till pale in color
- Whilst beating add the eggs one at a time
- As soon as the second egg is incorporated turn off and remove the bowl from the mixer
- Add to the bowl the vanilla essence
- Place the dry ingredients in a sieve and sieve onto the butter mix
- Fold the butter and flour together
- Once mixed transfer to a piping bag
- Preheat the oven to 180c
- Lay your muffin cups on a baking tray and fill 2/3s high with the batter mix
- Cook in the oven for 12-20 minutes depending on the size of your paper cups
- When the cupcakes are ready they will be slightly golden on the top and if touched will spring back like a sponge.
- Once the cupcakes are cooked remove from the oven and leave to cool naturally
- For the frosting place the room temperature butter in a mixing bowl along with the powdered sugar, salt and vanilla essence
- Beat on a medium speed for at least 2 minutes or until a smooth consistency is achieved
- Remove from the machine and transfer the mix into a piping bag
- To serve pipe rosettes or patterns on top of your cooled cupcakes
- Reserve at room temperature till needed
