TUNA TARTAR

Prep/Cooking Time: 15-30 Minutes

Ingredients

  • 250g Fresh tuna centre cut loin
  • 10g Red finger chili
  • 5g Mint
  • 5g Cilantro
  • 20g Rocket
  • 15/25ml Lemon juice
  • 15/25ml Olive oil
  • Salt
  • Pepper

Instructions

  • Remove any skin or sinue from the tuna
  • Cut the tuna into .5cm dice and reserve on ice till needed
  • Deseed the chili pepper and finely dice
  • Pick the cilantro and wash under cold water
  • Dry off the cilantro and roughly chop
  • Pick the mint and make sure the leaves are clean and free from grit
  • Finely slice the mint with a sharp knife
  • Wash the rocket and roughly chop (so is small enough to fit in a spoon)
  • Bruise the lemon and cut in half
  • Squeeze the juice from the lemon and reserve being sure to remove any seeds

To serve

  • Place the diced tuna in a mixing bowl
  • Add to the bowl the chopped chili, cilantro and mint
  • Toss over with a spoon
  • Add to the bowl the lemon juice and olive oil little by little tasting after each addition
  • Once the acidity is correct season with salt and pepper
  • Once the flavor is right add the rocket 
  • Mix again and serve in the china spoons
