TRADITIONAL FUDGE

Prep/Cooking Time: 45-60 Minutes

Ingredients

  • 700g Condensed milk
  • 300g Milk
  • 900g Light brown sugar
  • 230g Butter

Instructions

  • Place all of the ingredients into a thick bottom pan
  • Bring to the boil over a medium heat
  • Once boiling turn down to the simmer
  • Simmer for 15-20 minutes stirring often
  • Once the mix has cooked for 15 minutes check the consistency by spooning a little of the mix into iced water
  • If the mix sets to a soft ball the fudge is cooked
  • Remove from the heat and place in a whisking bowl
  • Wish on a high setting till the fudge has cooled but is still warm
  • Transfer the mix to an oiled tray and spread to the required thickness
  • Cool till cold
  • Cut into pieces
  • Reserve in a air tight container with gel packs
