TOMATO MOZZARELLA SKEWER

Ingredients
- 45pcs Cherry tomato
- 45pcs Mozzarella (mini)
- 10 Leaves Basil
- Olive oil
- Salt
- Pepper
- Bamboo skewers
Instructions
- Was the cherry tomatoes and leave to dry on paper
- Drain the mozzarella from the liquid and leave to dry for a minute on paper
- Once dry cut the cherry tomatoes in half through the core
- Also cut the mozzarella into halfs
- Wash the basil leaves and pat dry
- Pick the leaves into pieces of similar size to the tomatoes and mozzarella
- Take the skewer and add the pieces alternaing between the tomato, mozzarella and basil
- Do this till there are 3 pieces of each ingredient on the skewer
- reserve in the fridge till needed
To serve
- Place the skewers on a serving platter and drizzle with the olive oil
- Season generously with the salt and pepper
