TOMATO & OLIVE SALSA

Ingredients

  • 320g Tomatoes
  • 35g Red onion
  • 15g Cilantro
  • 60g Olives
  • 10g Lemon juice
  • 50g Olive oil
  • 2g Salt
  • 1g Pepper

Instructions

  • Wash the tomatoes and remove the core
  • Once washed and dried cut the tomatoes into a small dice (keeping the seeds in)
  • Place the tomatoes in a small bowl
  • Peel the onion and chop as finely as possible
  • Add to the chopped tomatoes 
  • Take the olives and remove the stones
  • Roughly chop and add to the bowl
  • Roughly chop the cilantro with the stems and again add to the bowl
  • Squeeze the lemon juice over the chopped ingredients and add the olive oil
  • Mix together well and season to taste
