TOMATO & OLIVE SALSA

- 320g Tomatoes
- 35g Red onion
- 15g Cilantro
- 60g Olives
- 10g Lemon juice
- 50g Olive oil
- 2g Salt
- 1g Pepper
Instructions
- Wash the tomatoes and remove the core
- Once washed and dried cut the tomatoes into a small dice (keeping the seeds in)
- Place the tomatoes in a small bowl
- Peel the onion and chop as finely as possible
- Add to the chopped tomatoes
- Take the olives and remove the stones
- Roughly chop and add to the bowl
- Roughly chop the cilantro with the stems and again add to the bowl
- Squeeze the lemon juice over the chopped ingredients and add the olive oil
- Mix together well and season to taste
