Ingredients

  • 500g Sugar
  • 500g Heavy cream (thick cream)

Instructions

  • Place the sugar in a thick bottom pan
  • Place the pan over a medium gas and cook until the sugar starts to brown around the edges
  • Once the sugar begins to brown stir the sugar
  • Keep stirring occasionally until the sugar is all disolved and turning to caramel
  • At this point the sugar will just start to smoke
  • At this point (being very careful) pour the cream into the sugar
  • The sugar will bubble violently and produce alot of steam. This is normal
  • Stir the sugar until well mixed
  • Leave the sugar mix to boil then remove from the heat
  • Leave to cool before placing in the fridge
