- 500g Sugar
- 500g Heavy cream (thick cream)
Instructions
- Place the sugar in a thick bottom pan
- Place the pan over a medium gas and cook until the sugar starts to brown around the edges
- Once the sugar begins to brown stir the sugar
- Keep stirring occasionally until the sugar is all disolved and turning to caramel
- At this point the sugar will just start to smoke
- At this point (being very careful) pour the cream into the sugar
- The sugar will bubble violently and produce alot of steam. This is normal
- Stir the sugar until well mixed
- Leave the sugar mix to boil then remove from the heat
- Leave to cool before placing in the fridge
