TOASTED RYE WITH TOMATO SALSA

- 60g rye bread
- 160g tomatoes
- 40g avocado (1/2 avocado)
- 10g red chili
- 15g red onion
- 10g olive oil
- 3g cilantro
- 10g lemon juice
- salt
- pepper
- 20g rocket
Instructions
- Peel and wash the onion and tomatoes
- Remove the core and roughly chop the tomato
- Finely dice the red onion
- Place the onion and tomato in a mixing bowl
- Add to the bowl the olive oil and lemon juice
- Place in the fridge till needed
- Place the rye bread in the panini grill to toast
- Once toasted place in the middle of a plate
- Place the rocket on the toast and spoon over the chopped tomato mix
- Chop the avocado and place on the top
- Season with salt and pepper
