THREE CHEESE RAVIOLI ALA NORMA

Ingredients

  • 300g three cheese ravioli
  • 60g eggplant
  • 60g cherry tomatoes
  • 20g basil
  • 5g garlic
  • 20g olive oil
  • salt
  • pepper

Instructions

  • Wash the eggplant and cherry tomatoes
  • Cut the eggplant into 1cm dice
  • Cut the cherry tomatoes into halves
  • Place the ravioli into salted boiling water
  • In a saute pan place the olive oil
  • Heat up and add the garlic
  • As the garic starts to colour add to the pan the eggplant
  • Cook till beginning to colour
  • Add to the pan the cherry tomatoes and toss together
  • Drain the cooked ravioli and add to the pan
  • Toss through and season to taste
  • Finish with torn basil
