THREE CHEESE RAVIOLI ALA NORMA
Prep/Cooking Time: 0-15 Minutes

- 300g three cheese ravioli
- 60g eggplant
- 60g cherry tomatoes
- 20g basil
- 5g garlic
- 20g olive oil
- salt
- pepper
Instructions
- Wash the eggplant and cherry tomatoes
- Cut the eggplant into 1cm dice
- Cut the cherry tomatoes into halves
- Place the ravioli into salted boiling water
- In a saute pan place the olive oil
- Heat up and add the garlic
- As the garic starts to colour add to the pan the eggplant
- Cook till beginning to colour
- Add to the pan the cherry tomatoes and toss together
- Drain the cooked ravioli and add to the pan
- Toss through and season to taste
- Finish with torn basil
