TARTE FLAMBé

Ingredients
- Pizza base 7-8"
- 4 White onions
- 40g Butter
- 20ml Olive oil
- Munster cheese
- Streaky bacon
- Parsley
- Mixed leaves and dressing to garnish
Instructions
- Place a thick bottom pan over a low heat and add to the pan the oil and butter
- Whilst the butter is melting peel the onions and remove the root. Finely slice the onions
- Once the onions are sliced add them to the pan and continue to cook over a low gas
- Place the bacon on a baking sheet and cook till crispy
- Remove from the heat and leave to cool
- Once cool store in an airtight container till needed
- Cook the onions stirring regularly until they begin to soften and color
- Keep cooking but stir more often so the natural sugars caramelize but do not burn
- Once the onions are soft, golden and sweet remove from the heat
- Season the onions to taste and leave to cool
- To serve the tart spread a Munster of the caramelized onions on the dough base
- Grate the Munster onto the onions so as to create patches of cheese but so the tart is not completely covered
- Place the tart in the oven and cook till the base is crispy and the cheese melted
- Remove from the oven and top with the crispy bacon and a sprinkle of chopped parsley
- Serve immediately with a side of mixed leaves
