Ingredients

  • Pizza base 7-8"
  • 4 White onions
  • 40g Butter
  • 20ml Olive oil
  • Munster cheese
  • Streaky bacon
  • Parsley
  • Mixed leaves and dressing to garnish

Instructions

  • Place a thick bottom pan over a low heat and add to the pan the oil and butter
  • Whilst the butter is melting peel the onions and remove the root. Finely slice the onions
  • Once the onions are sliced add them to the pan and continue to cook over a low gas
  • Place the bacon on a baking sheet and cook till crispy
  • Remove from the heat and leave to cool
  • Once cool store in an airtight container till needed
  • Cook the onions stirring regularly until they begin to soften and color
  • Keep cooking but stir more often so the natural sugars caramelize but do not burn
  • Once the onions are soft, golden and sweet remove from the heat 
  • Season the onions to taste and leave to cool
  • To serve the tart spread a Munster of the caramelized onions on the dough base
  • Grate the Munster onto the onions so as to create patches of cheese but so the tart is not completely covered
  • Place the tart in the oven and cook till the base is crispy and the cheese melted
  • Remove from the oven and top with the crispy bacon and a sprinkle of chopped parsley
  • Serve immediately with a side of mixed leaves
