SURF & TURF

Ingredients
- 8oz Filet steak
- 70g Shrimp tails raw (5 pieces)
- 10g Butter
- Salt
- Pepper
- 20ml Olive oil
- 100g Green beans
- 100g Potato
- 20g Celery
- 10g White onion
- 5g Parsley
- 35g Mayonnaise
- 5ml White wine vinegar
Instructions
- Cook the potatoes in boiling salted water
- Whilst the potatoes are cooking peel and wash the onion and celery
- Cut the onion and celery into fine dice and place in a mixing bowl with the mayonnaise
- Add to the bowl the chopped parsley and the white wine vinegar
- Once the potatoes are cooked remove from the water and leave to cool
- Once cooled cut into cubes and add to the bowl
- Stir well and season with the salt and pepper
- Reserve in the fridge till needed
- In boiling salted water cook the green beans until to the bite
- Once cooked remove from the water and cool on ice
- Again reserve in the fridge till needed
To serve
- Place a frying pan over a high gas and add to it the olive oil
- Once smoking add to the pan the heavily seasoned steak
- Cook on all sides to give good color
- Place in the oven if needed to cook through
- Once the correct temperature is achieved add the butter to the pan and coat the steak
- Remove the steak from the pan and leave to rest
- Wipe out the pan and heat once again
- Add to the pan a little more olive oil and cook the seasoned shrimp tails
- Once cooked remove from the pan and add the beans to reheat
- Once the beans are hot spoon onto a plate
- Place the steak on top of the beans along with the cooked shrimp
- Finish by adding the potato salad to the plate
