STICKY TOFFEE PUDDING

Ingredients

  • 3/4 cup Butter
  • 18oz dry dates (3/4 tsp soda)
  • 3 1/4 cup Flour
  • 3 tsp Baking powder
  • 2 1/4 cup sugar
  • 3 tsp Vanilla
  • 6 Eggs

Instructions

  • Roughly chop the dates and place in a pan
  • Add water till the dates are just covered
  • Bring to the boil
  • Add the baking soda and remove from the boil
  • Place the butter and sugar in a mixing bowl and beat on a medium speed
  • Once well creamed turn up to a high speed and add the eggs 1 by 1 till they are all combined
  • Remove the bowl from the machine and fold in the vanilla, flour and baking powder with a whisk
  • Lastly add the now warm dates and the liquid they were cooked in
  • Once everything is well combined pour the mixture into a greased and paper lined baking tray
  • Cook at 360f for 35-45 minutes turning half way through
  • Leave to cool before cutting
