STICKY TOFFEE PUDDING
Prep/Cooking Time: 60-90 Minutes

- 3/4 cup Butter
- 18oz dry dates (3/4 tsp soda)
- 3 1/4 cup Flour
- 3 tsp Baking powder
- 2 1/4 cup sugar
- 3 tsp Vanilla
- 6 Eggs
Instructions
- Roughly chop the dates and place in a pan
- Add water till the dates are just covered
- Bring to the boil
- Add the baking soda and remove from the boil
- Place the butter and sugar in a mixing bowl and beat on a medium speed
- Once well creamed turn up to a high speed and add the eggs 1 by 1 till they are all combined
- Remove the bowl from the machine and fold in the vanilla, flour and baking powder with a whisk
- Lastly add the now warm dates and the liquid they were cooked in
- Once everything is well combined pour the mixture into a greased and paper lined baking tray
- Cook at 360f for 35-45 minutes turning half way through
- Leave to cool before cutting
