STEAMED OCTOPUS SALAD

Prep/Cooking Time: Longer Than 120 Minutes

Ingredients

  • 100g Octopus
  • 25g Celery
  • 40g Cucumber
  • 40g Cherry tomatoes
  • 2g Garlic chopped in oil
  • 20g Capers
  • 20g Olives
  • 12g Olive oil
  • 12g White wine vinegar
  • 1g Salt
  • .25g Pepper

Instructions

  • Steam or gently simmer the octopus for 45 minutes to 1 hour
  • Once cooked place the octopus on a tray to cool and leave to cool at room temperature
  • Once the octopus is cooled cut off the tentacles and all useable meat
  • Cut into 1" thick pieces and place in a mixing bowl
  • Wash and dry off the celery, cucumber and cherry tomatoes
  • Once dry cut into pieces of equal size to the octopus and add to the bowl
  • Smash the garlic clove and add to the mix. Leave the garlic whole as it will be removed later
  • Add to the bowl the capers, olives, white wine vinegar and olive oil
  • Season to taste and leave in the fridge to sit for 24 hours
  • To serve spoon into a bowl
