STEAMED OCTOPUS SALAD
Prep/Cooking Time: Longer Than 120 Minutes

- 100g Octopus
- 25g Celery
- 40g Cucumber
- 40g Cherry tomatoes
- 2g Garlic chopped in oil
- 20g Capers
- 20g Olives
- 12g Olive oil
- 12g White wine vinegar
- 1g Salt
- .25g Pepper
Instructions
- Steam or gently simmer the octopus for 45 minutes to 1 hour
- Once cooked place the octopus on a tray to cool and leave to cool at room temperature
- Once the octopus is cooled cut off the tentacles and all useable meat
- Cut into 1" thick pieces and place in a mixing bowl
- Wash and dry off the celery, cucumber and cherry tomatoes
- Once dry cut into pieces of equal size to the octopus and add to the bowl
- Smash the garlic clove and add to the mix. Leave the garlic whole as it will be removed later
- Add to the bowl the capers, olives, white wine vinegar and olive oil
- Season to taste and leave in the fridge to sit for 24 hours
- To serve spoon into a bowl
