SPINACH WITH PINENUTS

Ingredients  
  • Spinach
  • Garlic
  • Onion
  • Olive oil
  • Pinenuts
  • Raisins
  • Salt
  • Pepper
  Instructions  
  • Wash the spinach and remove any stem
  • Dry the spinach and reserve in the fridge till needed
  • Place the pinenuts on a baking tray and toast till slightly browned
  • Once toasted transfer to a plate to cool
  • Once cool reserve at room temperature
  • Peel the onion and garlic and finely slice
  • Place the olive oil in a thick bottom pan and heat over a medium gas
  • Add the sliced garlic to the pan and cook till golden in colour
  • Add to the pan the sliced onions
  • Cook till softened then add the raisins
  • Add the spinach and cook till just beginning to wilt
  • Season with salt and pepper
  • Strain off any excess water
  • Serve immediately
