SPINACH WITH PINENUTS
Prep/Cooking Time: 0-15 Minutes

- Spinach
- Garlic
- Onion
- Olive oil
- Pinenuts
- Raisins
- Salt
- Pepper
- Wash the spinach and remove any stem
- Dry the spinach and reserve in the fridge till needed
- Place the pinenuts on a baking tray and toast till slightly browned
- Once toasted transfer to a plate to cool
- Once cool reserve at room temperature
- Peel the onion and garlic and finely slice
- Place the olive oil in a thick bottom pan and heat over a medium gas
- Add the sliced garlic to the pan and cook till golden in colour
- Add to the pan the sliced onions
- Cook till softened then add the raisins
- Add the spinach and cook till just beginning to wilt
- Season with salt and pepper
- Strain off any excess water
- Serve immediately
