SPICED RED BEAN SALAD

Ingredients

  • 60g guacamole
  • 120g red beans (cooked)
  • 60g sweetcorn
  • 40g red onion
  • 40g red bell pepper
  • 5g cilantro
  • 1g chili flakes
  • 10g lemon juice
  • 20g olive oil

Instructions

  • Place the cooked beans in a small mixing bowl
  • Peel the onion and finely slice
  • Wash the pepper and remove the core and seeds
  • Roughly chop the peppers and add to the beans along with the sweetcorn and onion
  • Wash and pat dry the cilantro and roughly chop
  • Add the lemon juice, olive oil & chopped cilantro to the bowl and season to taste
  • Spoon the beans to a serving dish and top with the guacamole
