SPICED RED BEAN SALAD

- 60g guacamole
- 120g red beans (cooked)
- 60g sweetcorn
- 40g red onion
- 40g red bell pepper
- 5g cilantro
- 1g chili flakes
- 10g lemon juice
- 20g olive oil
Instructions
- Place the cooked beans in a small mixing bowl
- Peel the onion and finely slice
- Wash the pepper and remove the core and seeds
- Roughly chop the peppers and add to the beans along with the sweetcorn and onion
- Wash and pat dry the cilantro and roughly chop
- Add the lemon juice, olive oil & chopped cilantro to the bowl and season to taste
- Spoon the beans to a serving dish and top with the guacamole
