SPICED CHICKPEA PATTY

- 500g Canned chickpeas
- 20g Sweet fresh red chili
- 25g Garlic
- 25ml Lemon juice
- 50g Tahini
- 250g Red onion
- 30g Coriander
- 3-4 Egg whites
- 12g Cumin
- 120g Breadcrumbs
- Flour if necessary to bind only
- 2-10g Dried chili flakes
- Salt
- Pepper
Instructions
- Drain the chickpeas and place them in a machine mixing bowl
- Mix on a low speed to smash them
- Once smashed but still chunky transfer to a large mixing bowl
- Peel the garlic and onion and remove any stem or root
- Remove the seeds from the chili and wash the coriander
- Slice the onions and garlic as finely as possible and place in a thick bottom pan with the olive oil
- Cook over a medium gas until they begin to color
- Remove from the heat and add to the smashed chickpeas
- Finely chop the chili and roughly chop the coriander
- Add the chopped chili and coriander to the chickpeas along with the tahini, egg white, lemon juice, cumin, breadcrumbs and flour (if necessary)
- Mix together well and season to taste
- Add the chili flakes till a good spice is achieved
- Once the mix is complete make a test patty and cook to see if the mix is dry enough and holds together
- If the sample is good form patty's with the rest of the mix and reserve till needed.
