SPICED BREAKFAST RICE

Ingredients

  • 150g Steamed rice
  • 2 pieces bacon
  • 20g Red onion
  • 30g Bell peppers
  • 15g Green onions
  • 10g Chili peppers
  • 30g Tomatoes
  • 2 Eggs
  • 20g Olive oil
  • Salt
  • Pepper

Instructions

  • Place the olive oil in a pan and heat over a high gas
  • Add to the pan the red onion and cook for a minute
  • Add the peppers to the pan and saute till beginning to soften
  • Add to the pan the tomatoes chopped and the cooked rice
  • Cook until all is hot through
  • Once hot make space in the middle of the pan and add in the eggs
  • Cook until the eggs begin to set
  • Add the finely sliced chilies and green onions and mix together well
  • Season to taste and serve
