SPICED BREAKFAST RICE

- 150g Steamed rice
- 2 pieces bacon
- 20g Red onion
- 30g Bell peppers
- 15g Green onions
- 10g Chili peppers
- 30g Tomatoes
- 2 Eggs
- 20g Olive oil
- Salt
- Pepper
Instructions
- Place the olive oil in a pan and heat over a high gas
- Add to the pan the red onion and cook for a minute
- Add the peppers to the pan and saute till beginning to soften
- Add to the pan the tomatoes chopped and the cooked rice
- Cook until all is hot through
- Once hot make space in the middle of the pan and add in the eggs
- Cook until the eggs begin to set
- Add the finely sliced chilies and green onions and mix together well
- Season to taste and serve
