SPANISH RICE

Prep/Cooking Time: 45-60 Minutes

Ingredients

  • 650g Red onion
  • 650g Red and yellow bell peppers
  • 800g Canned tomatoes
  • 1 Kilo Rice
  • 15g Paprika
  • 15g Chicken powder
  • 0.5g Saffron
  • 20g Salt
  • 3g Pepper
  • 30ml Olive oil

Instructions

  • Peel the onions and deseed the bell peppers
  • Cut the onion into a rough dice and cut the peppers to a similar size
  • Heat the oil in a thick bottom pan till hot
  • Add the onions to the pan and cook till starting to soften
  • Add the peppers to the pan and cook for a further 3 minutes
  • Add the spices, salt, pepper and Chicken powder to the pan 
  • Cook for a minute before adding the canned tomatoes
  • Bring to the simmer than add the rice to the pan
  • Bring to the simmer again then place in the oven
  • Cook for 25 minutes at 220c or until the rice is cooked through
