SPANISH RICE
Prep/Cooking Time: 45-60 Minutes

- 650g Red onion
- 650g Red and yellow bell peppers
- 800g Canned tomatoes
- 1 Kilo Rice
- 15g Paprika
- 15g Chicken powder
- 0.5g Saffron
- 20g Salt
- 3g Pepper
- 30ml Olive oil
Instructions
- Peel the onions and deseed the bell peppers
- Cut the onion into a rough dice and cut the peppers to a similar size
- Heat the oil in a thick bottom pan till hot
- Add the onions to the pan and cook till starting to soften
- Add the peppers to the pan and cook for a further 3 minutes
- Add the spices, salt, pepper and Chicken powder to the pan
- Cook for a minute before adding the canned tomatoes
- Bring to the simmer than add the rice to the pan
- Bring to the simmer again then place in the oven
- Cook for 25 minutes at 220c or until the rice is cooked through
