SLOW COOKED PORK BELLY

Prep/Cooking Time: Longer Than 120 Minutes

Ingredients

  • 4 Kilo Pork belly
  • 200g Honey
  • 100g Grain mustard
  • 200g White wine vinegar
  • 100g Brown sugar
  • 100ml Soy sauce
  • 10g Salt
  • 100g Sugar
  • 12g Paprika

Instructions

  • Take the pork belly and massage with the paprika
  • Leave the pork belly to marinate for 6 hours with the paprika
  • In a bowl combine the remaining ingredients and mix well
  • Once the pork belly is marinated coat with the mix and leave to sit for at least 2 hours at room temperature
  • After 2 hours cover the pork belly with aluminum foil and place in a pre-heated oven
  • Cook the pork belly at 140c for 4-6 hours
  • After 4 hours check the texture of the pork
  • A skewer should penetrate the flesh with no resistance
  • Drain off the liquid that has been produced from the pork
  • Remove the fat and place the liquid in a pan 
  • Chill the pork bell and cut into portions once cold
  • Reduce the cooking juice till a coating consistency is achieved
  • To serve warm the pork belly in oven and place on the soft gnocchi
  • Drizzle with the hot glaze
