SLOW COOKED PORK BELLY
Prep/Cooking Time: Longer Than 120 Minutes

- 4 Kilo Pork belly
- 200g Honey
- 100g Grain mustard
- 200g White wine vinegar
- 100g Brown sugar
- 100ml Soy sauce
- 10g Salt
- 100g Sugar
- 12g Paprika
Instructions
- Take the pork belly and massage with the paprika
- Leave the pork belly to marinate for 6 hours with the paprika
- In a bowl combine the remaining ingredients and mix well
- Once the pork belly is marinated coat with the mix and leave to sit for at least 2 hours at room temperature
- After 2 hours cover the pork belly with aluminum foil and place in a pre-heated oven
- Cook the pork belly at 140c for 4-6 hours
- After 4 hours check the texture of the pork
- A skewer should penetrate the flesh with no resistance
- Drain off the liquid that has been produced from the pork
- Remove the fat and place the liquid in a pan
- Chill the pork bell and cut into portions once cold
- Reduce the cooking juice till a coating consistency is achieved
- To serve warm the pork belly in oven and place on the soft gnocchi
- Drizzle with the hot glaze
