SHRIMP SALAD
Prep/Cooking Time: 30-45 Minutes

- 20 pieces (16/20 Peeled shrimps)
- 2 Red chili
- 120g Red onion
- 120g Tomatoes
- 100g Cucumber
- 30g White wine vinegar
- 40g Olive oil
- 2 Lemons
- Salt
- Pepper
Instructions
- Check the shrimps for any pieces of remaining shell and discard
- Bring to the boil enough water to cover the shrimps, add to the water half the vinegar and the lemon
- Add the shrimps to the water and cook till tender
- Once cooked remove from the water and leave to cool naturally
- In a clean bowl place the tomatoes and cucumber roughly chopped
- Add to that bowl the finely sliced onions and chili
- Add the remaining vinegar and olive oil to the bowl along with the shrimps
- Mix well and season with the salt and pepper
- Once the correct flavor is achieved reserve in the fridge till needed
