SHREDDED CABBAGE SALAD

Ingredients

  • 120g sun dried tomatoes
  • 20g parmesan
  • 4g garlic
  • 10g pine nuts
  • 40ml olive oil
  • Salt
  • Pepper
  • 160g white cabbage
  • 1 green apple
  • 10g white onion

Instructions

  • Place the sundried tomatoes in a small blender
  • Add to the tomatoes the pine nuts, garlic, parmesan and olive oil
  • Blend to a pulp
  • Reserve in the fridge till needed
  • Peel away the outer leaves of the cabbage and remove the core
  • Finely slice the cabbage and place in a mixing bowl
  • Core and de seed the apple and finely slice leaving the skin on
  • Add to the cabbage
  • Peel the onion and slice as finely as possible
  • Add this to the salad and toss through
  • Add to the salad 2 spoons of the sun dried tomato pulp
  • Toss well and season to taste
  • Serve
