SHREDDED CABBAGE SALAD

Ingredients
- 120g sun dried tomatoes
- 20g parmesan
- 4g garlic
- 10g pine nuts
- 40ml olive oil
- Salt
- Pepper
- 160g white cabbage
- 1 green apple
- 10g white onion
Instructions
- Place the sundried tomatoes in a small blender
- Add to the tomatoes the pine nuts, garlic, parmesan and olive oil
- Blend to a pulp
- Reserve in the fridge till needed
- Peel away the outer leaves of the cabbage and remove the core
- Finely slice the cabbage and place in a mixing bowl
- Core and de seed the apple and finely slice leaving the skin on
- Add to the cabbage
- Peel the onion and slice as finely as possible
- Add this to the salad and toss through
- Add to the salad 2 spoons of the sun dried tomato pulp
- Toss well and season to taste
- Serve
