SEAFOOD SPAGHETTI

- 60g salmon
- 60g sole fillet
- 60g 16/20 shrimps
- 10g olive oil
- 60g white wine
- 40g cream
- 40g white onion
- 4g garlic
- 2g tarragon
- 200g cooked spaghetti
- salt
- pepper
Instructions
- Place the olive oil in a sautee pan over a high heat
- Add to the pan the salmon, sole and shrimps seasoned with salt and pepper
- Cook for 1 minute on both sides
- Remove from the pan
- In the same pan place the chopped garlic and onion
- Sautee for a minute then add the white wine
- Reduce the white wine then add to the pan the cream
- Place the spaghetti in boiling salted water to re-heat
- Once the cream has reduced by half add the fish back to the pan
- Drain the spaghetti and add to the pan also
- Mix well and add the tarragon leaves
- Season to taste
