SCONES
Prep/Cooking Time: 30-45 Minutes

Ingredients
- 560g A/P Flour
- 5g Baking powder
- 5g Salt
- 105g Butter
- 105g Sugar
- 140g Currants or Raisins
- 240g Milk
Instructions
- Place all the dry ingredients in a mixing bowl along with the butter
- Bring together either by hand or on the machine's lowest setting
- Once the mix resembles crumbs add the milk
- Continue till mix till the crumbs begin to clump together
- Remove from the mixer and form into a ball by hand
- (as scones are short and crumbly you should work the mix as little as possible)
- Wrap the dough in cling film and reserve in the fridge till firm
- Pre heat the oven to 180c
- Once the dough is firm remove from the fridge and roll to the required thickness
- Cut out the scones to the required size and place on a baking sheet
- Brush the tops with egg wash and place in the pre heated oven
- Cook for 16-22 minutes or until the tops are golden and sides are cracked
- Remove from the heat and leave to cool naturally
- Once cooled slice in half and fill with jam and whipped cream
