SCONES

Prep/Cooking Time: 30-45 Minutes

Ingredients

  • 560g A/P Flour
  • 5g Baking powder
  • 5g Salt
  • 105g Butter
  • 105g Sugar
  • 140g Currants or Raisins
  • 240g Milk

Instructions

  • Place all the dry ingredients in a mixing bowl along with the butter
  • Bring together either by hand or on the machine's lowest setting
  • Once the mix resembles crumbs add the milk
  • Continue till mix till the crumbs begin to clump together
  • Remove from the mixer and form into a ball by hand
  • (as scones are short and crumbly you should work the mix as little as possible)
  • Wrap the dough in cling film and reserve in the fridge till firm
  • Pre heat the oven to 180c
  • Once the dough is firm remove from the fridge and roll to the required thickness
  • Cut out the scones to the required size and place on a baking sheet
  • Brush the tops with egg wash and place in the pre heated oven
  • Cook for 16-22 minutes or until the tops are golden and sides are cracked
  • Remove from the heat and leave to cool naturally
  • Once cooled slice in half and fill with jam and whipped cream
