SALMON WITH CAPERS & OLIVES

Instructions

  • 180g salmon 
  • 80g chopped tomatoes
  • 30g olives
  • 20g capers
  • 60g red onion
  • 40g olive oil
  • 5g parsley
  • 10g red wine vinegar
  • 140g brocolli
  • salt
  • pepper

Instructions

  • Peel the onion and roughly chop
  • Add the olive oil to a saute pan and heat 
  • Add to the pan the onion and cook over a high heat
  • As the onion begins to colour add to the pan the capers and olives along with the vinegar
  • Once the vinegar has evaporated add to the pan the tomatoes and bring to the simmer
  • In another pan heat the remaining oil
  • Season the salmon with salt and pepper and place in the hot pan
  • Move the pan to the oven
  • Cook the salmon till medium then remove from the heat
  • Cook the brocoli in salted wated and once cooked drain and add to the tomato mix
  • Spoon the tomato mix onto the center of the plate
  • Top with the salmon and serve
