SALMON WITH CAPERS & OLIVES
Prep/Cooking Time: 15-30 Minutes

- 180g salmon
- 80g chopped tomatoes
- 30g olives
- 20g capers
- 60g red onion
- 40g olive oil
- 5g parsley
- 10g red wine vinegar
- 140g brocolli
- salt
- pepper
Instructions
- Peel the onion and roughly chop
- Add the olive oil to a saute pan and heat
- Add to the pan the onion and cook over a high heat
- As the onion begins to colour add to the pan the capers and olives along with the vinegar
- Once the vinegar has evaporated add to the pan the tomatoes and bring to the simmer
- In another pan heat the remaining oil
- Season the salmon with salt and pepper and place in the hot pan
- Move the pan to the oven
- Cook the salmon till medium then remove from the heat
- Cook the brocoli in salted wated and once cooked drain and add to the tomato mix
- Spoon the tomato mix onto the center of the plate
- Top with the salmon and serve
