ROMAINE SALAD WITH BLUE CHEESE
Prep/Cooking Time: 15-30 Minutes

- 1 Piece Romaine salad
- 40g Crumbled blue cheese
- 40g Creme fraiche
- 10g Lemon juice
- Salt
- Pepper
- Olive oil
- 60g Stale bread
- 60g Cherry tomatoes
- 40g Celery
Instructions
- Remove all the leaves from the Romaine
- Wash well and dry off with paper, keep in the fridge till needed
- Place the creme fraiche and the blue cheese in a bowl and blend together with a spoon
- Add to the bowl the lemon juice, salt and pepper
- Mix well and store the dressing in the fridge till needed
- Remove the crust from the stale bread and cut into a rough dice
- Place the pieces of bread on a baking tray and drizzle with oil
- Season the bread and place in a pre heated oven to dry out
- Once the bread is crisp through remove from the oven and store at room temperature till needed
- Peel the celery and wash the stems along with the cherry tomatoes
- Dry off the tomatoes and celery and cut into pieces of equal size
To serve
- Place the romaine leaves in a bowl and drizzle with a little olive oil
- Add to the bowl the celery and cherry tomatoes
- Toss together before adding the dressing
- Mix well again and season to taste
- Add the croutons and spoon onto a plate
