ROASTED PEPPER AND GOAT CHEESE

Ingredients

  • 2 Red bell peppers
  • 25ml Olive oil
  • 200g Goats cheese
  • Salt
  • Pepper
  • 20 Pepper stuffed olives

Instructions

  • Wash the bell pepper and remove the stem
  • Cut the bell pepper from top to bottom into 10 pieces each pepper
  • Toss the pepper pieces in a bowl with the olive oil, salt and pepper
  • Place on a baking tray and roast in the oven at 220c
  • Cook until the edges begin to colour and the pepper softens
  • Remove from the heat and place in a bowl
  • Cover with plastic and leave to cool
  • Take the goat cheese and mash together with a spoon
  • Add to the cheese a little olive oil, salt and pepper
  • Once the peppers are cold lay on a tray skin side down
  • Place a small spoon of goat cheese on the centre of each
  • Roll the peppers over to wrap the goat cheese
  • Where the ends of the pepper overlap push through a skewer
  • Push the skewer all the way through and place an olive on the end

To serve

  • Pace the skewers on a board and drizzle with a little olive oil
  • Serve at room temperature
