ROASTED BELL PEPPER & GOAT CHEESE SALAD

Ingredients

  • 100g Red bell peppers
  • 50g Red onion
  • 40g Rocket
  • 30g Olives
  • 15g Olive oil
  • 8g Balsamic vinegar
  • 80g Goat cheese
  • 1g Salt
  • .25g Pepper

Instructions

  • Core and de-seed the bell peppers
  • Peel and remove the core from the onion
  • Cut both the peppers and the onion into bite size pieces
  • Place on a tray and drizzle with olive oil 
  • Season and place in a pre-heated oven at 220c
  • Cook until the peppers and onions are just cooked
  • Remove from the heat and leave to cool
  • Once cool place the peppers and onions in a small mixing bowl
  • Add to the bowl the rocket
  • Drizzle with olive oil and balsamic vinegar
  • Crumble 1/2 the goat cheese into the bowl and toss together
  • Season to taste
  • Spoon onto a serving dish and top with the remaining goat cheese
