ROASTED BELL PEPPER & GOAT CHEESE SALAD
Prep/Cooking Time: 30-45 Minutes

- 100g Red bell peppers
- 50g Red onion
- 40g Rocket
- 30g Olives
- 15g Olive oil
- 8g Balsamic vinegar
- 80g Goat cheese
- 1g Salt
- .25g Pepper
Instructions
- Core and de-seed the bell peppers
- Peel and remove the core from the onion
- Cut both the peppers and the onion into bite size pieces
- Place on a tray and drizzle with olive oil
- Season and place in a pre-heated oven at 220c
- Cook until the peppers and onions are just cooked
- Remove from the heat and leave to cool
- Once cool place the peppers and onions in a small mixing bowl
- Add to the bowl the rocket
- Drizzle with olive oil and balsamic vinegar
- Crumble 1/2 the goat cheese into the bowl and toss together
- Season to taste
- Spoon onto a serving dish and top with the remaining goat cheese
