RED ONION MARMALADE

Prep/Cooking Time: 60-90 Minutes

Ingredients

  • 1 kilo red onions
  • 200g sugar
  • 400g white vinegar
  • 400g red wine
  • 1 ltr water

Instructions

  • Peel and finely slice the red onions
  • Place the onions in a large deep pan
  • Add to the pan the sugar, vinegar, wine and water
  • Bring to the boil and cook till all the liquid has evaporated
  • After all the liquid is gone all that will remain is the marmalade
  • Remove from the heat and leave to cool
  • Reserve in the fridge till needed
