Ingredients

  • 30g red wine vinegar
  • 60g olive oil
  • 12g paprika
  • 6g cayenne pepper
  • 8g garlic
  • 6g cumin
  • 1g bay leaf
  • 2g chili flakes
  • 10g salt
  • 2g pepper

Instructions

  • Peel and remove the root from the garlic
  • Smash the garlic and chop as finely as possible
  • Place the chopped garlic in a bowl and add to it all the remaining ingredients
  • Mix together well and cover with clingfilm
  • Leave overnight in the fridge
  • To serve bring to room temperature and spoon into a ramakin
