QUINOA SALAD W APPLE AND WALNUTS

Ingredients

  • 130g Quinoa (when cooked)
  • 20g Green onions
  • 40g Apple
  • 40g Celery
  • 20g +20g Walnuts
  • Sugar
  • Paprika
  • Egg white
  • Salt
  • Pepper
  • Olive oil
  • Lemon juice

Instructions

  • Place the quinoa in a thick bottom pan and add to it double the amount of water by volume
  • Add salt to the pot and place the pot over a high heat
  • Bring the pot to the boil
  • Once boiled turn down to a simmer and cover with a lid
  • Cook the quinoa until the water has either evaporated or been absorbed
  • When you can make a well in the Centre and see there is no water left at the bottom of the pan the quinoa is cooked
  • Remove from the heat and spread over flat trays to cool
  • Cool naturally then once cold place in storage containers and reserve in the fridge

For the nuts

  • Place the walnuts in a bowl and add to it the sugar, paprika and salt
  • Mix well till the nuts are evenly coated with the spice and sugar
  • Pour the nuts on a tray and place in a pre heated oven
  • Cook at 140c till the nuts are golden in color and dry through
  • Once cooked remove from the heat and leave to cool
  • Once cool place in air tight containers and store at room temperature

For the salad

  • Wash all of the fresh ingredients as we will prepare with the skin on to keep as much fiber and nutrients within the dish
  • Once cleaned remove any core or root that is present
  • Cut the apples and celery into bite size pieces
  • Slice the green onions on the bias so they are roughly 1" in length

To serve

  • Place 100g of the cooked quinoa in a steel mixing bowl
  • Add to the bowl 50g of apple and 50g of celery
  • Add 20g Green onions and toss all the ingredients together
  • Squeeze the juice of half a lemon into the salad and and roughly the same amount of olive oil
  • Again toss though and season to taste
  • Once the desired flavor is achieved place the salad in a bowl
  • Top the salad with 40g of spiced walnuts
  • Serve
