QUINOA SALAD, CUCUMBER & AVOCADO
Prep/Cooking Time: 15-30 Minutes

- 100g Quinoa
- 55g Cucumber
- 20g Local spinach
- 35g Green beans
- 1/2 Avocado
- 5g Sesame seeds
- 1/2 Lemon
- 10ml Olive oil
Instructions
- Cook the quinoa in salted boiling water then cool and reserve till needed
- Cut the cucumber lengthways and remove the seeds
- Cut the cucumber into bite size pieces and reserve in the fridge
- Pick and wash the spinach and keep in the fridge till needed
- Top and tail the green beans and cook in salted boiling water
- Cool and reserve till needed
- Deseed and peel the avocado
- Toast the sesame seeds and cool
- To serve place the quinoa in a mixing bowl and add to it all the vegetables
- Squeeze over the lemon juice and drizzle with olive oil
- Mix well and season to taste
- Spoon into a bowl and top with the toasted sesame seeds
