QUINOA SALAD, CUCUMBER & AVOCADO

Ingredients

  • 100g Quinoa
  • 55g Cucumber
  • 20g Local spinach
  • 35g Green beans
  • 1/2 Avocado
  • 5g Sesame seeds
  • 1/2 Lemon
  • 10ml Olive oil

Instructions

  • Cook the quinoa in salted boiling water then cool and reserve till needed
  • Cut the cucumber lengthways and remove the seeds
  • Cut the cucumber into bite size pieces and reserve in the fridge
  • Pick and wash the spinach and keep in the fridge till needed
  • Top and tail the green beans and cook in salted boiling water
  • Cool and reserve till needed
  • Deseed and peel the avocado
  • Toast the sesame seeds and cool
  • To serve place the quinoa in a mixing bowl and add to it all the vegetables
  • Squeeze over the lemon juice and drizzle with olive oil
  • Mix well and season to taste
  • Spoon into a bowl and top with the toasted sesame seeds
