PUY LENTIL SALAD

Ingredients

  • 200g Cooked Puy Lentils
  • 100g Cucumber
  • 100g Cherry tomatoes
  • 60g Red bell pepper
  • 20g Red onion
  • 5g Parsley
  • 10g Toasted almonds
  • 20g Ricotta salata
  • Mustard dressing
  • Salt
  • Pepper

Instructions

  • Wash all the vegetables and deseed ot remove stems where needed
  • All of the vegetables need to be cut into pieces of similar size
  • The onion should be sliced as thinly as possible
  • To serve place all of the prepared vegetables into a bowl and add to it the lentils
  • Add to the bowl a generous amount of seasoning (to taste)
  • Toss well and spoon into a serving bowl
  • Top the salad with the roughly chopped parsley and toasted almonds
  • Finish the salad with a generous amount of shaved ricotta
