POTATOES WITH GREEN ONION

- 300g New potatoes
- 50g Green onions
- 25g Grain mustard
- 50g Olive oil
- Salt
- Pepper
- 25g White wine vinegar
Instructions
- Cook the new potatoes in salted boiling water
- Once tender remove from the heat and leave to cool
- Remove the outer leaves from the green onions and finely slice
- Place the sliced green onions in a bowl and add to them the vinegar and mustard
- Once the potatoes are cool cut into bite size pieces
- Combine the potatoes with the rest of the ingredients and mix well
- Season with the salt and pepper and reserve in the fridge till needed
