POTATOES WITH GREEN ONION

Ingredients

  • 300g New potatoes
  • 50g Green onions
  • 25g Grain mustard
  • 50g Olive oil
  • Salt
  • Pepper
  • 25g White wine vinegar

Instructions

  • Cook the new potatoes in salted boiling water
  • Once tender remove from the heat and leave to cool
  • Remove the outer leaves from the green onions and finely slice
  • Place the sliced green onions in a bowl and add to them the vinegar and mustard
  • Once the potatoes are cool cut into bite size pieces
  • Combine the potatoes with the rest of the ingredients and mix well
  • Season with the salt and pepper and reserve in the fridge till needed
