POTATO SALAD
Prep/Cooking Time:
30-45 Minutes
Ingredients
- 500g Potatoes
- 150g Mayonnaise
- 10ml White wine vinegar
- 100g Celery
- 80g White onion
- 20ml Olive oil
- 5 Eggs
- Salt
- Pepper
- 10g Parsley
Instructions
- Cook the potatoes till tender in salted boiling water
- Once cooked remove from water and leave to cool naturally
- Once cooled cut into quarters or smaller if the potatoes are large
- Reserve in the fridge till needed
- At the same time as cooking the potatoes boil the eggs in salted water
- Cook the eggs for 7 minutes before removing from the heat and cooling
- Once cooled peel the eggs and keep in the fridge till needed
- Place the mayonnaise in a mixing bowl and add to it the vinegar, olive oil and chopped parsley
- Peel the onion and trim the celery so all is clean
- Finely dice the onion and celery and add to the mayonnaise
- Add the potatoes to the mayonnaise along with the boiled eggs
- Mix together breaking the eggs with the spoon
- Season the mix to taste
- Reserve in the fridge till needed
