PINEAPPLE & RICE NOODLE SALAD

- 1.6 Kilo cooked rice noodles
- 35g Coriander
- 100g Green onions
- 120g Sweet chili peppers
- 330g Pineapple (peeled)
- 15ml Olive oil

Instructions
- Place the cooked rice noodles in a mixing bowl
- Wash the coriander, peppers and green onions and pat dry
- Remove the stem and seeds from the pepper before finely slicing
- Add to the noodles along with the roughly chopped coriander and green onions
- Slice the peeled pineapple and cut into thin rough strips (bite size)
- Add a little olive oil to the salad and mix well
- Reserve in the fridge till needed
Packaging
- Using tongs place 300g of the noodle salad into a 24oz container
- Fill the small sauce pot with the dressing and seal with a lid
- Place the dressing in the container with the salad
- Seal the salad with a lid and reserve in the fridge till needed
