PINEAPPLE & RICE NOODLE SALAD

Ingredients

  • 1.6 Kilo cooked rice noodles
  • 35g Coriander
  • 100g Green onions
  • 120g Sweet chili peppers
  • 330g Pineapple (peeled)
  • 15ml Olive oil

Instructions

  • Place the cooked rice noodles in a mixing bowl 
  • Wash the coriander, peppers and green onions and pat dry
  • Remove the stem and seeds from the pepper before finely slicing
  • Add to the noodles along with the roughly chopped coriander and green onions
  • Slice the peeled pineapple and cut into thin rough strips (bite size)
  • Add a little olive oil to the salad and mix well
  • Reserve in the fridge till needed

Packaging

  • Using tongs place 300g of the noodle salad into a 24oz container
  • Fill the small sauce pot with the dressing and seal with a lid
  • Place the dressing in the container with the salad
  • Seal the salad with a lid and reserve in the fridge till needed
