PICKLED SHALLOTS

- Shallots
- Sugar
- WW vinegar
- Coriander seed
- White peppercorn
- Bay leaf
- Peel the shallots and finely slice
- Place the sliced shallots in a storage container
- Add all other ingredients to the bowl and gently stir till the sugar has dissolved
- Cover the container and store in the fridge for at least 24 hours
- When needed remove the shallots from the liquid and leave to drain
- Use immediately
