PICKLED SHALLOTS

Ingredients  
  • Shallots
  • Sugar
  • WW vinegar
  • Coriander seed
  • White peppercorn
  • Bay leaf
  Instructions  
  • Peel the shallots and finely slice
  • Place the sliced shallots in a storage container
  • Add all other ingredients to the bowl and gently stir till the sugar has dissolved
  • Cover the container and store in the fridge for at least 24 hours
  • When needed remove the shallots from the liquid and leave to drain
  • Use immediately
