PICKLED RED ONION

- 300g Red onion
- 120g Red wine vinegar
- 40g Sugar
Instructions
- Pour the vinegar in a small saucepan
- Add to the pan the sugar
- Bring to the simmer over a medium gas
- Peel the red onion and remove any stem
- Finely slice the onion and reserve on the side until the solution boils
- Once the solution has boiled add the sliced onions to the pan and cover
- Remove from the heat and leave to cool naturally
- Reserve in the liquid till needed
- Store in an airtight container in the fridge till needed
