PICKLED RED ONION

Ingredients

  • 300g Red onion
  • 120g Red wine vinegar
  • 40g Sugar

Instructions

  • Pour the vinegar in a small saucepan
  • Add to the pan the sugar
  • Bring to the simmer over a medium gas
  • Peel the red onion and remove any stem
  • Finely slice the onion and reserve on the side until the solution boils
  • Once the solution has boiled add the sliced onions to the pan and cover
  • Remove from the heat and leave to cool naturally
  • Reserve in the liquid till needed
  • Store in an airtight container in the fridge till needed
