PICKLED CUCUMBER

Ingredients

  • 600g White wine vinegar
  • 200g White sugar
  • 1g Chili flakes
  • 4 each Cucumbers

If you wish to add a flavor to the pickle you can do so with a few sprigs of any soft herbs

Instructions

  • Wash the cucumbers and cut into 1/4"-1/2" slices
  • Reserve in a bowl till needed
  • Place the sugar, vinegar and chili flakes in a mixing bowl 
  • Leave till the sugar is dissolved, stir occasionally if necessary to speed it up
  • Once the sugar is diluted you can add the cucumber
  • Make sure the cucumber is completely covered with the solution
  • Cover the bowl and reserve in the fridge
  • Leave to steep for a minimum of 24 hours before using
  • The longer they are left the less crunch will remain as they will naturally soften
  • The vinegar solution can be used twice of three times before becoming diluted
  • Marinate will dilute as the cucumber will release water as it cures
