PEAR PICKLE
Prep/Cooking Time: 45-60 Minutes

Ingredients
- 900g Pears
- 200g Sugar
- 600g Red wine vinegar
Instructions
- Peel the pears and remove the cores
- Dice the pears into roughly 1cm pieces
- Place the pear in a thick bottom pan
- Add to the pan the sugar and vinegar
- Bring to the boil
- Turn down to a simmer
- Cook until all the liquid has evaporated and the pear is tender
- Remove from the heat and cool Reserve in the fridge till needed
