PATATAS BRAVAS

Makes 4 servings
- 450g Potatoes
- 1 Whole Fresh chili
- 80g Onion
- 12g Garlic
- 1 TSP Paprika
- 30ml Olive oil
- 600g Tomato sauce http://www.chefpickle.com/recipe/tomato-sauce
- Salt
- Pepper
- Parsley
Instructions
- Place the potatoes in salted water and bring to the boil over a high heat
- Cook the potatoes till tender then remove from the heat and leave to cool
- Once cool cut the potatoes into pieces roughly 1" square
- Toss the potatoes with the paprika and reserve in the fridge till needed
- Finely slice the onions and garlic and place in a fry pan with the olive oil
- Cook over a high heat till the onions begin to color
- Add to the pan the smoked paprika and toss through
- Add the fresh chili finely chopped followed by the tomato sauce
- Bring to the boil and simmer for 5 minutes
- Remove from the heat and season to taste
- Leave to cool and transfer to the fridge to store
To serve
- Place the potatoes in a pan with a little oil to make hot
- When hot through add to the pan the spiced tomato sauce
- Bring to the boil and check the seasoning
- Spoon the potatoes and sauce into a serving dish
- Top with some roughly chopped parsley
