PASTRY CREAM

Ingredients
- 3.2 Kilo Milk
- 800g Cream
- 1 Kilo Egg yolks
- 1.2 Kilo Sugar
- 160g Corn starch
- 120g Flour
- 225g Butter
- 3 Vanilla pods
Instructions
- Pour the cream and milk into a thick bottom pan
- Add to the pan the split vanilla pods
- Turn on a medium gas and bring the milk to the boil
- Whilst the milk is coming to the boil place the egg yolks and sugar in a bowl
- Whisk till pale in colour
- Add to the eggs the flour and corn flour and mix through
- Once the milk boils pour half onto the egg mix
- Whisk well so the eggs do not curdle
- Now pour the egg mix back into the milk pan, Stirring all the time
- Reduce the heat to low and keep stiring till the mix is thick and just off the boil
- Remove from the heat and add the butter
- Stir until the butter is melted
- Pour through a strainer and place in a container to cool
- Keep in the fridge till needed
