PAN FRIED SALMON
Prep/Cooking Time: 15-30 Minutes

- 180g Salmon filet
- 100g Borlotti beans
- 15g Red onion
- 3g Garlic
- 60g Tomatoes
- 25g Tomato sauce
- 7g Rocket
- 1/2 Lemon
- Olive oil
Instructions
- Peel the red onion and the garlic and finely chop both
- Keep in the fridge till needed
- Wash and remove the stem from the tomatoes and roughly chop
- Drain the borlotti beans and dispose of the liquid
- To serve
- Heat a fry pan on the stove with a little oil
- Season the salmon and place skin side down in the hot pan
- Place the pan in the oven to cook through
- In a second pan heat the olive oil over a high gas
- Add to the pan the onion and garlic and fry till beginning to color
- Once starting to color add to the pan the chopped tomatoes and cook for a minute
- Add to the pan the tomato sauce and bring to the simmer
- Cook till reduced and thickened
- Season to taste and place on the side
- Check the salmon and if cooked remove from the oven
- Add the rocket to the beans and toss over
- Spoon the bean mix onto the plate and place the salmon on top
- Drizzle with the olive oil, and add a piece of lemon on the side
