OLIVES
Prep/Cooking Time: 0-15 Minutes

- 3 kilo green queen olives
- 2 kilo kalamata olives
- 3 lemons
- 3 oranges
- 100g olive oil
- 10 sprigs rosemary
- 5g chili flakes
Instructions
- Drain the olives from their brine and place in a large bowl
- Add to the bowl the olive oil and chili flakes
- Peel the oranges and lemons directly onto the olives
- Once peeled juice the oranges and lemons over the olives
- Add to the bowl the rosemary and mix well
- Reserve in the fridge till needed
- Before service take out from the cooler so the oil melts
