OLIVES

Ingredients

  • 3 kilo green queen olives
  • 2 kilo kalamata olives
  • 3 lemons
  • 3 oranges
  • 100g olive oil
  • 10 sprigs rosemary
  • 5g chili flakes

Instructions

  • Drain the olives from their brine and place in a large bowl
  • Add to the bowl the olive oil and chili flakes
  • Peel the oranges and lemons directly onto the olives
  • Once peeled juice the oranges and lemons over the olives
  • Add to the bowl the rosemary and mix well
  • Reserve in the fridge till needed
  • Before service take out from the cooler so the oil melts
